Solo Ristorante is along the tranquil dining stretch 45 Amoy Street and it has been established in 2018. In March this year, this charming place has been helm by Chef Simone Fraternali. Chef Simone first set foot in Singapore when he joined the ilLido Group as Executive Sous Chef cum Chef de Cuisine, In 2019, a promotion to Head Chef led him to front the F&B operations of SO Sofitel Singapore, located in the city. Chef tells us about his early inspiration in cooking in the kitchen. In 2008, he landed a Chef de Partie position at the renowned Three Michelin Star Award restaurant Da Vittorio Relais & Chateaux, located in the lush countryside of Brusaporto, within the Lombardy region.
